Roasted Veggie Sammie

1/4 cup balsamic vinegar
2 tablespoons olive oil
1 teaspoon dried basil
2 teaspoons honey
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
3 each zucchini, sliced 1/4″ thick
1 each yellow bell pepper, cut into wedges
1 each red bell pepper, cut into wedges
1 each onion, sliced
3 each portobello mushroom, sliced
1 each French bread loaf
3/4 cup mozzarella cheese, shredded
3 tablespoons mayonnaise

1. Placed first 7 ingredients in baggie and mix well. Add veggies and allow to marinate in fridge for 2 hours.

2. Roast in oven at 400 for 20 minutes.

3. Toast french bread. Spread mayonnaise on bread and then top with mozzarella. Add veggies and top with other slice of bread.

8 servings.

Recently I came to an ugly realization–I am middle aged. I didn’t really think so but then I doubled my age and thought, “Hmmmm…some of people don’t live to that age. I must be middle age.” This epiphany came in the third quarter of my 39th year. So I am surviving middle age…it’s scary.
