Yummy Black Beans & Rice

I love black beans and rice. I’m trying to find ways to get more veggies, though, too. Here’s a great way!

black beans and rice

1 teaspoon extra virgin olive oil
1 large onion, chopped
2 cloves garlic, minced
3/4 cup brown rice
1/2 can green chili peppers
1 1/2 cups vegetable broth
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
3 1/2 cups black beans, canned, drained and rinsed
1/2 package frozen chopped spinach, thawed and squeeze water out

1. In a stockpot over medium-high heat, heat the oil. Add the onion and garlic, saute for 4 minutes. Add the rice and saute for 2 minutes.

2. Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices, green chii peppers, beans and spinach. Allow to heat through for approximately 10 minutes

Serves 6.

Per Serving (excluding unknown items): 283 Calories; 4g Fat (12.2% calories from fat); 13g Protein; 49g Carbohydrate; 11g Dietary Fiber; 1mg Cholesterol; 904mg Sodium.

Exchanges: 3 Grain(Starch); 1/2 Lean Meat; 1/2 Vegetable; 1/2 Fat.

I just got through with vacation and it was amazing. I was busy! But it was so nice to have ME-TIME! Ya know? My eating did get off track some. Doesn’t everyone’s on vacay? I am getting back on a schedule and back to the way it should be. It’s funny. I prefer being on a schedule with my food. It sounds a little nuts. As much as I hate being back at work and back to the daily grind, I don’t mind being back to food schedule at all. I feel better that way. So I am trying to just do better and get totally focused again.

Yes, I have been doing my Juice Plus. I have done well enough that I am now listed as Direct Distributor. Not a big title or anything, but it meant something to me. I really want to help others with their health. I know the slightest improvement can make a huge difference! And I am not even just talking using Juice Plus. I mean, when you make a change, you FEEL it! I feel the difference. I feel different. Then I act differently!

It is amazing. It truly amazes me how big of a snowball effect it all really is. Ya know? When one thing is off, the rest just follows. When I was depressed and feeling like shit, it affected the rest of my life and really caused some problems. The weight went up. The depression worsened. I felt worse about myself. I didn’t want to do anything. So on and so forth. It gets to be a pattern. There comes a point where we have to find something that breaks it. If not, we’re going to live miserably. I don’t think God put us here to be miserable all the time. I just don’t believe He is that kind of God. We can make ourselves miserable. We can allow life to get us. And believe me! I know how easy it is. I have had so many crappy things happen to me that I could write an album/cd of country songs. I just had to finally say that it was in the past and figure out a way to live the life I want.

I am nowhere near where I want to be. But I’m a lot closer than I was before! That’s progress! And that is how you have to live. Intentionally.

Balsamic Chicken

I love balsamic and I love chicken. This is a great idea. I found it at Diabetic Living Online. I really love that site.

MAKES: 4 servings

SERVING SIZE: 1 chicken breast half

CARB GRAMS PER SERVING: 3
Balsamic Chicken

  • 4small skinless, boneless chicken breast halves (1 to 1-1/4 pounds total)
  • 1tablespoon paprika
  • 1tablespoon olive oil
  • 1/2teaspoon snipped fresh rosemary
  • 2cloves garlic, minced
  • 1/4teaspoon ground black pepper
  • Nonstick cooking spray
  • 1/4cup dry red wine or water
  • 3tablespoons balsamic vinegar
  • Fresh rosemary sprigs (optional)

1. If desired, place each chicken breast half between two pieces of plastic wrap and pound with the flat side of a meat mallet to a rectangle 1/4 to 1/2 inch thick.

2. In a small bowl, combine paprika, oil, rosemary, garlic, and pepper; mix well until it becomes a paste. Rub both sides of each chicken beast half with paste mixture. Coat a 13x9x2-inch baking pan with nonstick cooking spray. Place coated chicken in prepared pan; cover and refrigerate for 2 to 6 hours.

3. Preheat oven to 450 degrees F. Drizzle chicken with wine. Bake for 10 to 12 minutes or until an instant-read meat thermometer inserted in the thickest portion of the chicken registers 170 degrees F and the juices run clear, turning once halfway through baking. (If chicken has been pounded, bake about 6 minutes or until chicken is no longer pink and juices run clear, turning once halfway through baking.)

4. Remove from oven. Immediately drizzle vinegar onto chicken in the baking pan. Transfer chicken to serving plates. Stir the liquid in the baking pan and drizzle over chicken. If desired, garnish with fresh rosemary. Makes 4 chicken breast halves.

I cannot sleep! And for a change it is due to excitement! How’s that? Amy is H-A-P-P-Y and E-X-C-I-T-E-D! My first day of vacation was amazing. I tried sleeping but no. That was not happening. What was happening instead was that a lot of people I have spoken to about Juice Plus have decided they are ready to go forward with me! They are ready to make changes in their lives and I am so thrilled for all of us!

Making life changes, especially for your health, isn’t easy. There are too many easy ways out. But having a support group, which I am going to help give to these people will not only help us all with having wonderful information, but it will help us feel accountable! We don’t have to do anything! We’re adults! But if we want to discuss our trials and tribulations with others in the same boat, I think that will give the help that is really beneficial to many.

I truly feel like today was a blessing from God. Had I worked my regular 8 hour job, I couldn’t have spoken to everyone I spoke with today. I had six conversations that were lengthy and productive. It took all day and night. I also had several conversations via Facebook chat and set appointments for Saturday!

What an amazing day!
