Leftover Easter Sammy

I think this is a great Easter sammy! If you have those eggs left that you don’t know what to do with, here’s a great idea from Skinny Taste. It’s easy and good!

  • 100 calorie sandwich roll (deli thin flats, potato rolls, etc)
  • 1 tbsp chopped scallions
  • 1 large hard boiled egg, sliced
  • 1 tbsp light mayonnaise
  • 1 thick slice ripe tomato
  • salt and fresh cracked pepper to taste


Assemble the sandwich by placing the egg on the bread, then the tomato, then scallion. Top with salt and pepper and spread mayonnaise on the top of the bread.

Recently I came to an ugly realization–I am middle aged. I didn’t really think so but then I doubled my age and thought, “Hmmmm…some of people don’t live to that age. I must be middle age.” This epiphany came in the third quarter of my 39th year. So I am surviving middle age…it’s scary.
