Sesame Chicken Pasta Salad

12 ounces rotini
1/4 cup sesame seed salad dressing
3/4 cup light soy sauce
1/2 cup white wine vinegar
2 tablespoons sugar
2 cups chicken, cooked and cubed
1/2 cup fresh parsley
1/2 cup green onion
1 each tomato, seeded and chopped
4 cups fresh spinach, torn
1 tablespoon sesame seeds

1. Cook rotini according to package directions. Drain and cool.

2. Add chicken, parsley, onion, spinach and tomato. Add to pasta.

3. Mix together liquid ingredients. Mix in sugar. Pour over pasta mixture and mix well.

4. Top with sesame seeds.

6 Servings.

Per Serving (excluding unknown items): 439 Calories; 15g Fat (31.7% calories from fat); 21g Protein; 54g Carbohydrate; 3g Dietary Fiber; 52mg Cholesterol; 1378mg Sodium.

Recently I came to an ugly realization–I am middle aged. I didn’t really think so but then I doubled my age and thought, “Hmmmm…some of people don’t live to that age. I must be middle age.” This epiphany came in the third quarter of my 39th year. So I am surviving middle age…it’s scary.
