Battling The Bulge On A Budget

1/2 cup unsweetened applesauce

8 ounces crushed pineapple in juice

1/3 cup skim milk

1/3 cup Egg Beaters® 99% egg substitute

1/2 teaspoon vanilla extract

1 3/4 cups all-purpose flour

1/3 cup sugar

2 teaspoons baking powder

1/4 cup brown sugar, firmly packed

Preheat oven to 350. Spray a 9″ square pan with cooking spray.

In a medium bowl with a wooden spoon, stir together the applesauce, pineapple juice, milk, egg substitute and vanilla.

In a large bowl combine the flour, granulated sugar, and baking powder; make a well in the center. Add the applesauce mixture; stir until just combined. (Do not overmix.)

Scrape the batter into the pan. Spoon the crushed pineapple over the batter and sprinkle with the brown sugar. Bake until golden and a toothpick inserted in the center comes out clean, about 30 minutes. Cool in the pan on a rack 10 minutes and serve…

Recently I came to an ugly realization–I am middle aged. I didn’t really think so but then I doubled my age and thought, “Hmmmm…some of people don’t live to that age. I must be middle age.” This epiphany came in the third quarter of my 39th year. So I am surviving middle age…it’s scary.
