1/4 each red onion, finely diced
1/2 each jalapeno, finely diced
1/2 each tomato, diced small
1 tablespoon lime juice
2 slices turkey bacon slices
1/4 each avocado, sliced
2 slices french baguette slices
2 pieces bibb lettuce leaves
1 slice tomato
olive oil spray
1. Mix onion, jalapeno and tomato with lime juice to make fresh pico de gallo.
2. Cook turkey bacon until crisp.
3. Assemble sandwich with all ingredients. Spray non-stick skillet with olive oil spray and put sandwich in. Cook until browned. Flip and cook other side until browned as well with olive oil spray.
