Revamped Club

1/4 each red onion, finely diced
1/2 each jalapeno, finely diced
1/2 each tomato, diced small
1 tablespoon lime juice
2 slices turkey bacon slices
1/4 each avocado, sliced
2 slices french baguette slices
2 pieces bibb lettuce leaves
1 slice tomato
olive oil spray

1. Mix onion, jalapeno and tomato with lime juice to make fresh pico de gallo.

2. Cook turkey bacon until crisp.

3. Assemble sandwich with all ingredients. Spray non-stick skillet with olive oil spray and put sandwich in. Cook until browned. Flip and cook other side until browned as well with olive oil spray.

Per Serving (excluding unknown items): 348 Calories; 15g Fat (38.0% calories from fat); 12g Protein; 44g Carbohydrate; 6g Dietary Fiber; 25mg Cholesterol; 697mg Sodium.

Exchanges: 1 1/2 Grain(Starch); 1/2 Lean Meat; 2 1/2 Vegetable; 1/2 Fruit; 2 1/2 Fat.

Recently I came to an ugly realization–I am middle aged. I didn’t really think so but then I doubled my age and thought, “Hmmmm…some of people don’t live to that age. I must be middle age.” This epiphany came in the third quarter of my 39th year. So I am surviving middle age…it’s scary.
