Apple Crisp

Apple Crisp is one of my favorite desserts ever! I love fruit desserts. Believe it or not they are better to me than the gooey, sticky, overly sweet desserts that many people crave. Now don’t get me wrong…every now and then I want some chocolate cake or a caramel concoction. But if you put a fruit dessert in front of me and a crazy over-the-top dessert, I would most likely pick the fruit dessert.

3 medium baking apples, cored, sliced thin
1 tsp cinnamon
2 Tbsp sugar
2 Tbsp flour

Topping:
1 cup quick oats
1 tsp vanilla
1/2 tsp cinnamon
1/4 cup brown sugar
2 Tbsp heart-healthy margarine

Mix first four ingredients and place into 9-inch (square or round) baking dish.

In small bowl, mix Topping ingredients until crumbly. Sprinkle topping over the apples.

Bake at 325 degrees until apples are soft and topping is golden brown (about 30 minutes).

Recently I came to an ugly realization–I am middle aged. I didn’t really think so but then I doubled my age and thought, “Hmmmm…some of people don’t live to that age. I must be middle age.” This epiphany came in the third quarter of my 39th year. So I am surviving middle age…it’s scary.
